How To Make Apple Flaxseed Muffins
Making these Apple Flaxseed Muffins is super easy! First, whisk together the dry ingredients in a bowl. Mix the wet ingredients, including the grated Granny Smith apple, in another bowl.
Add the dry ingredients to the bowl of wet ingredients, taking care not to overmix the batter before dividing it in the greased muffin tin.
The muffins bake until golden brown and a toothpick inserted in the center comes out clean, leaving you with a delicious and healthy treat!
Blend The Wet Ingredients
- Preheat your oven to 350 degrees F. Spray a regular muffin pan with non stick spray, or insert muffin papers in each cavity.
- Mix all the dry ingredients together in a medium sized mixing bowl. Use a whisk to mix them so the spices, ground flaxseed, and flour are all well combined.
- In a large mixing bowl, combine the milk, vegetable oil, maple syrup, vanilla extract, ACV, and eggs.
- Whisk to blend the eggs and liquid ingredients, then add the grated apple to the bowl, combining with the liquids.
Add The Dry Ingredients
- Add the blended dry ingredients to the large mixing bowl of dry ingredients.
Fold Dry Ingredients For Muffin Batter
- Using a spatula, fold in the dry ingredients, scraping the sides of the bowl as you go. Blend until just incorporated. It will be slightly lumpy, like thick pancake batter.
Fill Muffin Pan and Bake
- Using a measuring cup, fill each muffin cavity ⅔ full. Bake in the preheated oven for 30 minutes at 350 F.
- Remove from oven when the flaxseed muffins spring back to a light press in the center of a muffin in the middle of the pan. Allow to cook 5 minutes, then tip out onto a serving plate and enjoy!
Substitutions and Variations
Here are a few delicious variations making these flaxmeal muffins:
- Honey: Substitute honey for the granulated sugar for a more natural sweetness.
- Nuts and Seeds: Feel free to add your favorite chopped nuts or seeds, such as pecans, almonds, or sunflower seeds.
- Spices: For a flavor variation, add a pinch of nutmeg or ginger to the batter.
- Gluten-Free: To make these muffins gluten-free, use a gluten-free flour blend in place of the whole wheat flour.
Tips for Success
- Don't Overmix: Overmixing the batter can result in tough muffins. Mix the batter until just combined, then stop.

Either is fine. The golden flaxmeal is a slightly lighter product, but both are fine for this recipe.
Absolutely! For the freshest flavor and maximum nutritional benefits, you can grind your own flaxseeds using a coffee grinder or food processor. Simply grind whole flaxseeds into a fine powder and use it in place of the pre-ground flaxseed meal in the recipe.
No, the apple peel has a lot of nutrition in it, so just grate the entire apple, even the core. No one will know, promise!
