Ingredients

  • ¼ cup Vegetable oil
  • 1 large Egg beaten
  • ¼ cup Milk
  • 1 cup Zucchini 1 shredded zucchini, medium size
  • ½ cup Granulated sugar
  • ¼ cup Brown sugar packed, light
  • 1 ¾ cup All-purpose flour
  • ½ teaspoon Baking soda
  • ½ teaspoon Baking powder
  • 1 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • ½ teaspoon Ground Allspice
  • ½ cup Raisins optional

Instructions

  • Add all ingredients to your bread machine pan in the order recommended by your machine's manufacturer (typically wet ingredients first, then dry ingredients).
  • Most bread machines require the wet ingredients (the vegetable oil, eggs, and milk) to the bread maker pan.

  • Next, add the granulated sugar and brown sugar.

  • Last, add the dry ingredients on top, followed by the raisins and spices.

  • Select the "Bread" or "Cake" cycle on your bread machine. If your machine has a 1-lb. or 2-lb. loaf setting, choose the appropriate one for your desired loaf size.
  • Press start and let your bread machine work its magic! The baking time will vary depending on your machine, but it will typically take around 1-2 hours.
  • Once the cycle is complete, remove the loaf from the bread machine pan and let it cool on a wire rack before slicing and serving.

Notes

  • Add ½ cup of chopped walnuts, pecans, or almonds for a delightful textural contrast and extra flavor.
  • Fold in ½ cup of your favorite chocolate chips for a decadent twist.
  • Add a pinch of ground ginger or cloves for an extra layer of warmth and complexity.
